20 Days of 20 Minute Recipes ✨ Day 14: Loaded Sweet Potato Fries.
Ingredients:
Russet House Organic Crispy Sweet Potato Fries Olive oil
Salt & Pepper
1 white onion, diced
Ground chicken
2 garlic cloves
1 red bell pepper, diced
1⁄2 tsp chilli powder
1⁄2 tsp paprika
2 cups baby spinach
1 cup shredded cheddar cheese
1⁄2 bunch fresh cilantro (optional)
Method:
- Cook sweet potato fries according to package instructions.
- Over medium heat, add olive oil to a pan and cook onion for 5 minutes, or until soft.
- Add ground chicken and garlic stirring occasionally until chicken is cooked.
- Add red bell pepper, species and spinach and cook for an additional 2-3 minutes.
- Stir through cheese until melted and then serve over sweet potato fries, topped with
cilantro.
