Ingredients: - 3 pounds of fresh tomatoes - 1/4 cup of olive oil - 1 chopped onion - 6 cloves of garlic - Salt and pepper to taste - 1/4 teaspoon of cayenne pepper (optional) - 2 cups of chicken or vegetable broth - Fresh basil leaves (optional) Instructions: 1. Preheat the oven to 400°F (200°C). Cut the tomatoes in half and place them cut-side up on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. 2. Roast the tomatoes in the oven for about 30 minutes or until their skins start to wrinkle and brown. 3. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for about 5 minutes or until the onions become transparent. 4. Add the roasted tomatoes, cayenne pepper (if using), and broth. Bring the mixture to a boil, then lower the heat and let it simmer for about 15 minutes. 5. Remove from heat and let the mixture cool before blending until it's completely smooth. You can either use an immersion blender or transfer the mixture to a blender to puree. 6. Put the blended soup back into the pot and reheat it. Taste and adjust the seasoning according to your liking. 7. Serve the tomato soup with fresh basil leaves as a garnish, if you like.
